Hello to all our Laughing Pear fans out there. Chef David Kratky here. I figured we should keep the summer themed drinks going since we got such a huge response out of our last one. This is a great way to perk up those hot days of summer. What I like about them is that they are amazing for adults and kids alike. Adults have been known to put other ingredients in these, but I am leaving that part out. You adults can use your imagination on that one.
Let us start with the Strawberry Ice-Cream Recipe. Please remember you will need an ice-cream maker for this outstanding recipe.
STRAWBERRY ICE-CREAM MAKES 6/8 SERVINGS
1 Pint of Fresh Strawberries, cleaned and Quartered1/2 TSP Freshly Squeezed Lemon Juice
6 TBSP Plus roughly 1/3 Cup of Sugar
Large Pinch of Kosher Salt + 1/8 TSP (Morton’s I always recommend)
1 Cup Milk
2 Cups Heavy Whipping Cream
METHODOLOGY FOR THE ICE-CREAM
Place strawberries, the 6 TBSP of sugar, lemon juice, and the pinch of salt in a medium sized sauce pan. Cook over medium heat, stirring occasionally, for roughly 20 minutes until the strawberries reach a jam-like consistency. Let cool to room temperature and refrigerate for at least one hour or until cold.
Place the cream, milk, and remaining sugar, and the 1/8 TSP of salt in a medium sized sauce pan. Cook over medium heat, stirring occasionally, until the liquid is just about to the simmering point. Once it reaches the simmering point, remove from heat and cool over an ice-bath to room temperature. Refrigerate at least 4 hours, but I recommend over night to ensure perfect temperature and perfect texture. Add in the strawberry mixture as well before refrigerating. Then place in your ice-cream maker and follow the manufacturers instructions.
WILD BERRY SODA RECIPE
1 + 1/2 Cups Raspberries1 + 1/2 Cups Blueberries
1 + 1/2 Cups Blackberries
1 Cup Strawberries
1/2 TSP Freshly Squeezed Lime Juice
A Little Under 1 Cup of Sugar
4 Cups Cold Seltzer Water
1/4 TSP Kosher Salt
1/4 Quarter Cup Boysenberries
1/4 Cup Olallieberries
METHODOLOGY FOR THE SODA
Puree in a food processor 1 cup of each, raspberries, blueberries, blackberries, and 1 cup of the strawberries. Then strain through a fine mesh sieve to discard all the seeds. (Seeds are no good and will make all the difference in the world if they are all out, so very important step.) You should end up with roughly 2 cups of clean puree. Ina pitcher, add in the puree, sugar, lime juice, and salt. Add the cold seltzer water and stir until nicely combined.
TO SERVE
Place a few small scoops of the ice-cream into 6/8 (4 Oz. TO 6 Oz.) glasses depending on the size you want to serve. Add in a few of the berries left over. Then fill with the Berry Seltzer mixture and serve those puppies immediately.
