Hello to all my fellow foodies,
Today is our day in the kitchen where we make our stocks and broths, for sauces and soups, etc. Any good soup or sauce must start with a great stock or broth. So why do I keep referring to a stock and a broth? Are they not the same? NO THEY ARE NOT! Don’t let anyone tell you different either.
STOCK – A FLAVORFUL LIQUID EXTRACTED FROM BONES.
BROTH – A FLAVORFUL LIQUID EXTRACTED FROM MEAT OR VEGETABLES.
Veal stock is something we have on hand at all times, although it is the most time consuming it is a must in my kitchen! We always have a bunch of quarts frozen in the freezer for everyday use. Same with vegetable broths, game stocks, etc. These creations are like the building blocks or the foundation for all great foods.
My next blog we will have pictures posted of our stock and broth making day!
